Grade numbers on a green coffee listing can look arbitrary from the outside, but they’re actually a fairly precise shorthand for defect count and physical consistency — and understanding them helps buyers match a lot to the right use case without over- or under-paying.
Grading is typically based on a defect-value system: samples are checked for insect damage, mold or foul odors, moisture content, foreign matter, and the proportion of broken, oversized, or undersized beans. A Grade 1 lot allows very few defects — often a defect tolerance in the single digits to low teens — alongside tight moisture control (commonly around 11.5–12.5%) and near-zero foreign matter. Each grade step down relaxes that tolerance: Grade 2 and 3 allow progressively more defects and broken beans, which shows up in the cup as less clarity and a more rustic, earthy character rather than a flaw exactly — just a different intended use.
At the commercial end, grades like G4 or "non-grade / pixel" lots — mixtures of broken beans, fragments, and smaller screen sizes — aren’t lower quality in a food-safety sense; they’re sorted for cost-efficient bulk use in instant coffee manufacturing, large-scale blending, and industrial roasting where visual bean uniformity matters less than price per ton.
The practical takeaway for buyers: don’t treat grade as a single quality score. Pair it with the process method and cup profile notes to know whether a lot fits a specialty single-origin program or a high-volume commercial blend.
