Anaerobic processing has become one of the most talked-about methods in specialty coffee, and for good reason — it can turn a good bean into a memorable one. But the process itself is fairly simple to understand once you break down what’s actually happening inside the tank.
After fully ripe red cherries are picked, they’re sealed inside airtight fermentation tanks instead of being left to ferment in open air or water channels. Without oxygen, the yeasts and bacteria naturally present on the cherry skin metabolize sugars differently than they would in an aerobic environment, producing a different mix of organic acids and aromatic compounds. Over a controlled window — commonly around 7 days — temperature, humidity, and fermentation time are monitored closely, because even small swings can push the flavor development too far in one direction.
The payoff is a cup profile that’s harder to get from standard natural or washed processing: winey and berry-forward notes, floral aromatics, a noticeably sweeter finish, and a fuller body that lingers. It’s also less forgiving — an under- or over-fermented batch can turn funky or vinegary rather than complex — which is why anaerobic lots typically carry a price premium over standard naturals.
For roasters buying anaerobic-processed beans, it’s worth asking not just how long fermentation ran, but how temperature was controlled during that window — that detail says more about consistency between lots than the day count alone.
